Combine the flours, dry milk, salt, and sugar, then add to the mixer bowl with the starter and water. Fit your mixer with the paddle attachment and turn it to its lowest speed. Mix all the ingredients together for 2 to 3 minutes to make a sticky, cohesive dough. Stop the mixer, scrape the bowl, and switch to the dough hook.
Divide dough into 16 portions; shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 375° for 12-15 minutes or until golden brown. Brush with butter and sprinkle with coarse salt if desired. Remove from pans to wire racks.Set the pans on a baking sheet, cover, and let rise till puffy, about 90 minutes to 3 hours. Notice how nicely the dough has crowned over the rims of the flower pots. Nestle the pan of loaves into another pan; this insulating technique is called “double panning,” and will ensure the bottoms of the loaves don’t burn.
1) Weigh up. First, weigh all the ingredients and dice the butter into cubes. If using dried yeast follow the instructions below.. 2) Start kneading. Add the ingredients (minus the butter) to a large mixing bowl and set a 6-minute timer.Place water, eggs, oil, vinegar, flour, xanthan gum, salt, sugar, and yeast, in that order, in a bread machine. Run Basic cycle and select Light or Medium for the crust. Remove when cycle ends. Cool completely before slicing.
Roll each piece into a smooth ball and place in a 9" x 13" pan a few inches apart (placing three rolls across and four rolls down). Cover the pan with a dish towel and let rise for 30 minutes. While the dough rises, preheat the oven to 350°F and prepare your egg wash.
