From the long side, roll the dough into a log and cut in 12 rounds using a serrated knife. Arrange the rounds in the greased baking dish. Cover with a damp towel and let proof in a warm space for 35 minutes. Preheat the oven to 375° F. Bake the cinnamon rolls for 15 to 20 minutes, until golden brown.

Bake until the internal temperature reaches at least 190°F in the center, and up to 205°F for a crustier loaf. To make the glaze: Combine the confectioners' sugar, vanilla, and salt. Add enough cream to make a pourable consistency.

Combine the flours, dry milk, salt, and sugar, then add to the mixer bowl with the starter and water. Fit your mixer with the paddle attachment and turn it to its lowest speed. Mix all the ingredients together for 2 to 3 minutes to make a sticky, cohesive dough. Stop the mixer, scrape the bowl, and switch to the dough hook.

Divide dough into 16 portions; shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 375° for 12-15 minutes or until golden brown. Brush with butter and sprinkle with coarse salt if desired. Remove from pans to wire racks.
Set the pans on a baking sheet, cover, and let rise till puffy, about 90 minutes to 3 hours. Notice how nicely the dough has crowned over the rims of the flower pots. Nestle the pan of loaves into another pan; this insulating technique is called “double panning,” and will ensure the bottoms of the loaves don’t burn.
1) Weigh up. First, weigh all the ingredients and dice the butter into cubes. If using dried yeast follow the instructions below.. 2) Start kneading. Add the ingredients (minus the butter) to a large mixing bowl and set a 6-minute timer.
Place water, eggs, oil, vinegar, flour, xanthan gum, salt, sugar, and yeast, in that order, in a bread machine. Run Basic cycle and select Light or Medium for the crust. Remove when cycle ends. Cool completely before slicing.

Whole-wheat buns – simply substitute three quarters of the flour with whole wheat flour. Flavoured buns: Cheese – add 100g / 1/2 cup of grated cheddar cheese with the flour prior to mixing. After the final rise, brush each bun with the egg wash and top with more grated cheese, around 1 tbsp per bun. Bake as per the method in the recipe.

Roll each piece into a smooth ball and place in a 9" x 13" pan a few inches apart (placing three rolls across and four rolls down). Cover the pan with a dish towel and let rise for 30 minutes. While the dough rises, preheat the oven to 350°F and prepare your egg wash.

Sieve the flour, salt, ground mixed spice and cinnamon into a large mixing bowl, then rub in the butter using your fingertips. Make a well in the centre of the mixture, then add the sugar and yeast. 2. Beat the egg and add to the flour with the tepid milk. Mix together to a form a soft, pliable dough.
